Ten Seconds Yunnan Rice Noodle is a China-based chain restaurant with 750 branches across that nation and over 70 outlets in North America. It now opens its first location in Hawaii at Pearlridge Center. The restaurant is known for serving Chinese Yunnan rice noodle in a variety of broths, including spicy Szechuan, pork, chicken and spicy-sour. Each rice noodle bowl is served with ten side dishes. The restaurant prides itself on delivering noodle superhot and super-fast to diners. The menu boasts unique and traditional Yunnan style rice noodle, made-to-order, using only fresh ingredients delivered daily.
Yunnan rice noodle is regarded as the “crossing-the-bridge” noodle, according to lore that dates back to the Qing Dynasty (1644-1912). At that time there lived a scholar who studied diligently for his imperial exam at a gazebo of an island in the center of a lake in Yunnan Province. The only one way to get to the site was by crossing a lengthy bridge. The scholar’s favorite food was rice noodle, which his wife brought to him every day. But she realized the noodle would get cold and soggy on the long walk to the gazebo. She devised a method to keep the noodle delicious and her husband happy. She brought the chicken soup in a fire-heated ceramic pot that kept it piping hot. Once at the gazebo, she added the noodles and other ingredients, delivering a just-made taste. Word spread of the delicious dish, and the wife's ingenious way of keeping the food hot. The dish became known as crossing-the-bridge noodle as a testimony of the wife’s quest to spare no effort to deliver only the tastiest meal.
